Southwest Crock~pot Chicken

Yesterday I tried out a new recipe and I said I'd review it and give you the recipe. I found a recipe online and then changed it and added to it. It's a crock~pot recipe so it's something you can start in the morning and enjoy after a long day at work or out adventuring!



Southwest Crock~pot Chicken
  • Frozen chicken tenders (I used a half bag-although I will use more next time)
  • Jar of chunky salsa (I used mild)
  • 1 small cans of sliced olives
  • 1 small can diced green chile's (I used mild)
  • taco seasoning
  • Can of whole kernel corn
Pour 1/4 of the jar of salsa in your crock. Then open the chicken bag and dump the taco seasoning in and shake up to coat chicken. Next put the chicken in the crock and add the rest of the ingredients. Cover and cook on high half the day or low all day. Serve with rice, or side of your choice!

This was super yummy although next time I will add black beans as well. The kids loved it and wanted seconds and hubby enjoyed it too! I use mild everything since the kids and I were eating it, but if it was for hubby and his buddies I definitely would have used medium or hot! I will be making this again in the future, but adding black beans as well and making more!
