500 Calorie Lemon Chicken Stir Fry Dinner

Hey, y'all! Sharing one of our many 500 calorie recipes with you is long over due! Life just seems to keep happening and I didn't mean to stop posting them! Here's one we recently had! I know you will love it, because we did...there weren't even any left overs!!! (Which is fine by me because I don't eat left overs!) Anyways back to the recipe! Lemon Chicken Stir Fry, Brown Rice and a glass of white wine...yes, you read that right!!! Wine, the dinner was super filling and we were able to have a glass of wine!!! The kids had some light strawberry yogurt with their dinner and a glass of milk....still 500 calories for them as well! This dinner was found on The Eating Well website, picture is from there as well. (A wonderful place to find 500 calorie meals.)

3 Ingredient Peanut Butter Cookies

Happy Monday! It's the beginning of another week! Can you believe we'll be in March on Thursday?! This year is just flying by!!! If you joined us on Six Word Saturday you saw some pictures of the cookies the girls and I were baking! I must admit the first time I tried the recipe I was very skeptical of it working and actually turning out. Using only 3 ingredients to make a cookie?! Wow! It just didn't seem right! I am here to tell you they are so delicious! Perfect for those days when the kids want to bake something all by themselves-except putting them in and out of the oven. I even venture to say you can go right out and bake these as soon as you're done reading this...you won't need to go to the store!

Valentine's Day

Happy Valentine's Day y'all! I hope you are thoroughly enjoying the day with the one's you love! Here's the food side of our day...you know you've been waiting to hear all about it!!! 

Valentine's Eve & Heart Calzones

Today is the day I do all my shopping for Valentines day. This includes the gifts Cupid leaves on the table for the kids (usually some candies and something for each kid that strikes her fancy), the ingredients for the family dinner, the stuff for making Moose's Valentines with him (candy MP3 players this year) and of course some chocolate for me the family. But tomorrows family Valentine dinner is going to be a lot of fun! The reason I say family dinner is because FFF Hubby always makes us a yummy, gourmet meal and sets the table up all fancy and we enjoy a quiet dinner after the kids are in bed. It's our tradition...no reservations needed, no sitters, and we get to enjoy a fun dinner with the kids and a romantic one with each other! But anyways the family dinner will be Calzone Hearts!!!! The kids will each get to help make theirs and it's perfect for our family dinner and a movie! I'll share the recipe with you now so you can make them with your family if you choose!

Cooking When Injured

So y'all, last night I sliced my pinkie open and it cut to the bone-right about where it attaches to the hand. OUCH!!!!!!! I was putting some ice in a glass and the glass shattered...and no, the glass wasn't hot, warm anything, I just took it out of the cupboard. FFF Hubby was working so I didn't go to the hospital and my pinkie is still attached today. I have it sterile and covered. It still hurts like crazy and I'm typing with one less finger...well doing everything with one less finger. Who knew how much we use our pinkie fingers?!

Super Bowl (Food) Recap

Happy Monday y'all! I hope you had as much fun this weekend as we did! It was non stop, but so fun! We went to Home Depot Kid's Workshop on Saturday and the kids made little treasure boxes. Then off to Chuck-E-Cheese for a sweet lil' boys birthday party! What fun but after the party I had to grab some groceries-yes the day before Super Bowl!!! The store was insane but thank goodness it was only the girls and I as the boys had some other errands to take care of. We made it out alive and all in one piece!!! Then it was Sunday and time for the Super Bowl! FFF Hubby planned a party at our church and there was a great turn out with some delicious food!!! My niece and I made some Oreo stuffed brownies as well as some simple pizza rolls! But there was also some home made artichoke dip, chili, taco dip, mock Red Lobster biscuits and a ton of other stuff! Yes...no calorie counting yesterday!!! But I know you want to hear about how to make those Oreo stuffed brownies and the simple pizza rolls!!! Well the time has come! Now you too, can make them at home! They are both crazy simple, delicious and were a big hit!

Healthy Chicken & Dumplin's-Crock Pot Style

It's Thursday again and the weekend is closing in on us! Yesterday I made Chicken & Dumplin's in the crock pot and it was delicious! I've never been a fan of Chicken and Dumplin's but these are so yummy and I'm so happy a fellow mom shared her recipe with me!!! This will go into our meal rotations at home...everyone loved it even FFF Hubby...well except for Sassy Sis because she was at Grammy's for her Wednesday visit! This is another simple, healthy dinner and it's hearty and DELICIOUS!!!! Did I mention how yummy this is? Because if not you should know it is AMAZING!!!!
