500 Calorie Chicken Marsala Recipe

Happy Tuesday y'all!! I hope you are having a relaxing day! I know you have been anxiously awaiting the 500 calorie Chicken Marsala recipe so here it is! This is for 4 servings (although it fed all 5 of us since our girls are still small)!
Chicken Marsala 
     Ingredients
  • 5 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 lb. boneless, skinless chicken breast halves, pounded thin
  • 3 Tbsp. Promise® Buttery Spread
  • 1 small onion, finely chopped (I omitted this as FFF hubby  & kids aren't fond of onions)
  • 1 package (10 oz.) white or crimini mushrooms, thinly sliced
  • 1/3 cup Marsala wine or chicken broth
  • 1 cup fat free reduced sodium chicken broth
  • 1/2 tsp. fresh thyme leaves or 1/8 tsp. dried thyme leaves   
     Directions
  • Combine 4 tablespoons flour, salt and pepper in shallow dish. Dip chicken in flour mixture until evenly coated.
  • Melt 2 tablespoons Promise® Buttery Spread in 12-inch skillet over medium-high heat and cook chicken, turning once, 10 minutes or until thoroughly cooked. Remove to serving platter and keep warm.
  • Melt remaining 1 tablespoon Spread in same skillet over medium heat and cook onion and mushrooms, stirring occasionally, 3 minutes or until tender. Sprinkle with remaining 1 tablespoon flour and cook, stirring constantly, 1 minute. Add wine and cook 1 minute, scraping brown bits from bottom of skillet. Add broth and thyme. Bring to a boil over high heat, then continue boiling, stirring frequently, 2 minutes or until sauce is thickened. To serve, pour sauce over chicken.
Roasted Rosemary & Garlic New Potatoes
     Ingredients
  • 3 Tbsp. I Can't Believe It's Not Butter!® Light Spread, melted
  • 1-1/4 lbs. small red new potatoes, rinsed and quartered
  • 1 clove garlic, chopped
  • 1 Tbsp. fresh rosemary leaves or 1 tsp. dried rosemary leaves, crushed
     Directions
  • Preheat oven to 425°.
  • In shallow roasting pan, combine all ingredients. Roast, stirring occasionally, 40 minutes or until potatoes are crisp-tender and golden brown.
Mushrooms with Sweet Onion and Marsala Wine (I swapped this out for cheese & garlic baguette slices)
     Ingredients
  • 2 Tbsp. Promise® Buttery Spread
  • 1/2 cup sweet onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1-1/2 lbs. white or crimini mushrooms, quartered
  • 1/4 tsp. dried thyme leaves, crushed
  • 1/4 cup dry red wine or fat free reduced sodium beef broth
     Directions
  •  In 12-inch nonstick skillet, melt Promise® Buttery Spread over medium-high heat and cook onions, stirring occasionally, 6 minutes or until starting to brown. Stir in garlic, mushrooms and thyme and cook, stirring occasionally, 10 minutes or until liquid from mushrooms starts to evaporate. Add wine and simmer 2 minutes. Garnish, if desired, with chopped fresh parsley. Season if desired, with salt and ground black pepper.
Cheese and Garlic Baguette slices
      Ingredients
  • 1 mini baguette
  • 10 sprays I Can't Believe It's Not Butter!® Spray Original
  • shredded cheese
     Directions
  • Preheat oven to 425°
  • Slice baguette into 1/2" slices and place on cookie sheet
  • Spray slices with butter spray
  • Sprinkle cheese on top and bake for 10 minutes or until cheese is melted and bread is slightly browned
I hope you enjoy your dinner! Sorry there are no pictures...they didn't turn out so well but the dinner was so delicious! Everyone enjoyed it in our house!
