Manic Monday & Baked Chicken

Howdy, folks! We're coming off a long weekend with Moose. He had mid winter break and spent time with his Grammy and Auntie Am this weekend. He's to big to call his aunts Aunties....or so he says....so just Aunt Am and Uncle Jake and cousins. Anyways it makes this a manic morning around here. He enjoyed the long break and wasn't ready to get back to the swing of things. He got all ready for school and then curled up on the couch...silly kid. The girls were up early and full of energy and I forgot to make coffee....but not to worry! I'm on my first cup now. What a crazy Monday morning 'round here! 


Now on to figure out what's for dinner tonight.
We have lots of chicken so I know I will use chicken. Ha!!!! I know!!!! On this stormy day baked chicken sounds fantastic!!!! I'll make Butter Baked Chicken!!!! It is sooo delicious, quick and easy to make!!!! I'll share the recipe with you now so you can make it tonight as well!!! 

Butter Baked Chicken

Ingredients

  • 2 eggs, beaten
  • 1 cup crushed cracker crumbs
  • 1/2 teaspoon garlic salt
  • ground black pepper to taste
  • 4 skinless, boneless chicken breasts
  • 1/2 cup butter
  Directions
  • Preheat oven to 375 degrees F (190 degrees C).
  • Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.
  • Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
  • Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.
