Fishin' In the Creek

Happy Thursday all!!! We have a creek that runs behind our house...a creek full of fish! Delicious! I enjoy eating seafood, and our whole family does as well!!! FFF Hubby and kiddos have been out almost every day catching trout left and right! It seems like as soon as they go out it's only a matter of 5 minutes or less and they're back in with their catch!!!

Those are just two of the about 10 fish they've caught recently! With all this fish catching we have had fish twice this week! Even Lil' Miss loves it, and now asks for it all. the. time! I don't have pictures to share with you of the finished dishes (it's all I can do to get it on the plates before they all eat it), but I do have 2 recipes to share!!! You have to gut them, clean them and cut their heads off before you start-FFF Hubby does all that, so I couldn't tell you how. Or you could buy your fish at your market and it's all ready for you to cook up! Both of these recipes feed our family of 5, I cooked rice and fresh veggies to go with them. Delicious healthy meals!!!

Pan Fried Fish

Ingredients
  • 5 trout, salmon, etc (10-15") - filleted (you can always do more or less-this is what I cooked)
  •  3 Tbsp lemon juice
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp Worcestershire sauce
  • 2 cups flour
  • 4 Tbsp butter
Directions
  • Preheat oven to 325°F
  • Place fish fillets in a glass dish add lemon juice, salt, pepper, and Worcestershire sauce. Let them marinate for 5 minutes
  • Melt butter in a pan large enough for fish
  • Remove fillets (save marinade) and coat with flour
  • Put fillets in butter (skin side up) cook until Golden.
  • Place fillets (skin side down) in lightly greased baking pan and pour marinade over the top
  • Cook in preheated oven for about 10 minutes (longer for bigger fish). Internal temp should be 140 degrees Fahrenheit and fish should be white and flaky.
Garlic Butter Oven Baked Fish

Ingredients
  • 2 large fish 18" or bigger  filleted (you can use as many or as few as you need, this is just what I used)
  • 6 Tbsp softened butter
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 Tbsp garlic powder
  • 1 tsp Worcestershire sauce
  • 1Tbsp lemon juice
  • 2 lemons-sliced
Directions
  • Preheat oven to 450°F
  •  Combine butter, salt, pepper, garlic powder, Worcestershire sauce and lemon juice in a bowl
  • Place fish in lightly greased baking pan and rub butter mixture inside and outside the fish
  • Place lemon slices in and on fish
  • Put remaining butter mixture on and around fish
  • Bake in 450°F for 20-25 minutes. Internal temp should be 140 degrees Fahrenheit and fish should be white and flaky.
 One of the biggest reasons people don't like to cook fish at home is because of all the little bones. Here is a short video from You Tube showing you how to debone a fish. It works for most fish! It is super easy to do as well!


So there you go! You can totally cook and enjoy delicious fish at home!!! It doesn't take a long time and is delicious! Every bit of fish I made was devoured!! The fish would also make a delicious fish sandwich for lunch...no more fast food fish sandwiches when you can make your own even more delicious and healthier! Enjoy!!
