Cornish Game Hens

Happy Monday, y'all! We are starting the week off a little rough...by we are, I really mean I am. I couldn't sleep last night AT ALL, but at least had a delicious, homemade dinner in my tummy! You see on our last grocery trip FFF (Fast Food Free) Hubby bought some Cornish Game hens because he had never had them. So I finally decided to make them this weekend and it was the perfect dinner for a Sunday evening! I was a little nervous because I had never cooked a Cornish Game Hen. I found out it's simple and they turn out so delicious. 


 Don't those look delicious? Yes, they were so tasty...even the kids loved them! I found a recipe and then changed it up a little bit. 


Cornish Game Hens

Ingredients

  • 6 (20-ounce) Cornish game hens
  • 1 cup lemon juice
  • 3/4 cup butter or margarine, melted
  • 1 1/2 teaspoons dried thyme
  • 1 1/8 teaspoons garlic powder
  • 1 teaspoon salt
  • 2  teaspoons pepper

Directions

  1. Preheat oven to 375 degrees F
  2. Place the hens in a large roasting pan. 
  3. In a bowl, combine lemon juice, butter, thyme, salt, pepper, and garlic powder. Pour mixture over the hens. 
  4. Bake, uncovered, at 375 degrees F for 30 minutes. Baste with lemon juice mixture. Bake 30 minutes longer and enjoy.
See, so simple even a kid can make it. We decided this would make a monthly appearance on our dinner menu! The kids loved watching me prepare the hens and when they were eating dinner they said "tastes like chicken!" Lets be honest...that's really what they are! I am no longer worried about cooking them. Although tonight FFF Hubby is going to be making a duck-now that's something I am worried about!
