Cornish Game Hens
Happy Monday, y'all! We are starting the week off a little rough...by we are, I really mean I am. I couldn't sleep last night AT ALL, but at least had a delicious, homemade dinner in my tummy! You see on our last grocery trip FFF (Fast Food Free) Hubby bought some Cornish Game hens because he had never had them. So I finally decided to make them this weekend and it was the perfect dinner for a Sunday evening! I was a little nervous because I had never cooked a Cornish Game Hen. I found out it's simple and they turn out so delicious.
Don't those look delicious? Yes, they were so tasty...even the kids loved them! I found a recipe and then changed it up a little bit.

Monday Blahs & Marshmallow Yummies!!!
Happy Monday y'all!! I have a serious case of the Monday blahs today! After a fun spring break week followed by a busy Easter weekend I'm having a hard time getting back into the swing of things! I have BBQ Chicken going in the crock pot and will make rice and veggies to go along with it. Housework is coming along and the girls and I will make pink lemonade cupcakes as well.
In The Friday Five last week I posted a picture of cereal treat Easter Eggs. Well we did make some and they were delicious. Although I used Marshmallow Peeps instead of marshmallows but they were fun and delicious!

Mexican Chicken Recipe
It's almost the weekend!!! Not just any weekend, but a holiday weekend!!! We have so many things going on this weekend that I have lists made to organize each day and it's all planned out! Of course things don't go as planned so I'm prepared for the unexpected, too! Oh-wait you're here for a Mexican Chicken Recipe...oops. So on Tuesday you heard read I was going to try a new recipe...and I did!!! It was so delicious!!! I could eat it everyday and not be tired of it...OK for about 2 days! Our whole house loved it, and it will be made again.
Mexican Chicken
Ingredients
- 4 skinless, boneless chicken breasts
- 4 TBSP Worcestershire Sauce
- 1 cup chunky salsa
- 1 cup shredded Cheddar cheese
- 2 tsp garlic powder
- 1/4 tsp salt
- 1 tsp black pepper
- 1/2 tsp Cumin
Directions
- Preheat oven to 375 degrees F.
- Heat a greased skillet on medium heat, add Worcestershire sauce. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes).
- Put chicken in a lightly greased baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees F for 15 to 20 minutes (until cheese is bubbly and starts to brown).
- Serve with rice and enjoy!

Relax A Little
Today is our day of relaxing during spring break. It makes meal time fairly easy for me as I don't need to plan food to take along for the whole day. It's my firm belief that we all need relaxing days every once and awhile. A relaxing day used to consist of fast food for meals, but not anymore. So what does that mean we do for meals when we are going without fast food?
