The Friday Five-Easter Style-




Since Easter weekend is upon us I thought it'd be a perfect time to make our Friday Five incorporate all things Easter. Well, let's go!

Mexican Chicken Recipe

It's almost the weekend!!! Not just any weekend, but a holiday weekend!!! We have so many things going on this weekend that I have lists made to organize each day and it's all planned out! Of course things don't go as planned so I'm prepared for the unexpected, too! Oh-wait you're here for a Mexican Chicken Recipe...oops. So on Tuesday you heard read I was going to try a new recipe...and I did!!! It was so delicious!!! I could eat it everyday and not be tired of it...OK for about 2 days! Our whole house loved it, and it will be made again.

Mexican Chicken 

Ingredients
  • 4 skinless, boneless chicken breasts
  • 4 TBSP Worcestershire Sauce
  • 1 cup chunky salsa
  • 1 cup shredded Cheddar cheese
  • 2 tsp garlic powder
  • 1/4 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp Cumin
Directions
  1. Preheat oven to 375 degrees F.
  2. Heat a greased skillet on medium heat, add Worcestershire sauce. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes).
  3. Put chicken in a  lightly greased baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees F for 15 to 20 minutes (until cheese is bubbly and starts to brown). 
  4. Serve with rice and enjoy!
I can't wait to hear how you like this dish! The chicken was so juicy and had so much flavor!!!

Relax A Little

Today is our day of relaxing during spring break. It makes meal time fairly easy for me as I don't need to plan food to take along for the whole day. It's my firm belief that we all need relaxing days every once and awhile. A relaxing day used to consist of fast food for meals, but not anymore. So what does that mean we do for meals when we are going without fast food? 

For the FFF Family it means healthy, quick (for me to make), and delicious food. Tonight we will be having Mexican Chicken! It's a new recipe for us so I'm excited to try it out, review it and share it with you. It's quick and easy to make. Doesn't it look delicious? I can only hope mine will turn out as yummy looking as the picture with the recipe!!! I would rather have a homemade meal any day, than a fast food meal. Yes, even on the days we spend relaxing I would rather spend 15 minutes preparing something healthy, filling and delicious for FFF Family. Spring Break


It's Spring Break and schools out for Moose this week and we have a fun week ahead. Although I wish the weather would cooperate a little! Rain all week until Saturday and then nice when the kiddos go back to school. We will be staycationing this year. Staycationing is fun though, and we will be hitting up the zoo, OMSI, the circus and a pool. We enjoyed the sunshine today and walked around our downtown enjoying the little shops and some delicious ice cream. We will be packing lunches as we go out on our excursions this week and avoiding fast food. So each evening FFF Mom (AKA me) will need to go over the next days activities and start packing for the next day. You need a lot more when you are feeding 5 as opposed to one or two, and Moose now has a hollow leg and can eat all day. I wonder how he stays so skinny? We will be purchasing our beverages when we are out and about though, well except water which will be packed with us. There will also be crock-pot dinners  mostly this week as well...since FFF Mom won't have a lot of time to cook. What kinds of things will you be doing over spring break, and what are your eating plans?
